Any vegetable can be made for your event depending on availability. We do try to use seasonal locally grown vegetables, but we can get most of anything in for your event. You may have them roasted or sautéed.

Protein

Our staff can prepare other dishes and are not limited to the following.

Chicken:

  • Chicken Florentine – Sautéed chicken breast topped with a spinach Alfredo.
  • Chicken Tuscany – Sautéed chicken breast topped with sun-dried tomato, fresh basil, chopped olive, red pepper tomato base sauce, garnished with caramelized onion and fresh parsley.
  • Chicken Marsala – Pounded chicken breast cutlet breaded and sautéed. Topped with sautéed mushrooms in a Marsala wine demi-glaze.
  • Roasted Teriyaki Chicken – Chicken quarter seasoned and roasted. Glazed with a teriyaki glaze and deep fried. Garnished with chopped scallion and carrot slivers.
  • Chicken Kiev – Stuffed chicken cutlet stuffed with Cheddar and broccoli, topped with a creamy Alfredo sauce. 
  • Chicken Cordon Bleu – Stuffed chicken cutlet stuffed with Swiss cheese, ham, cream cheese, fried and baked, served with a chicken volante, and garnished with fresh parsley.
  • Chicken Sarasota – Chicken cutlet breaded, fried, and topped with Swiss cheese, and a spicy BBQ sauce.
  • Blackened Chicken – Chicken breast rubbed with blackened spicy seasoning, grilled, and topped with corn salsa.

 

Pork:

  • Pork Roulades – Pork loin seasoned with cinnamon, sugar crust, wrapped in hickory smoked bacon side, slow roasted and served with cranberry chutney.
  • Mango Pork Chops – Pork chops bone-in, seasoned and grilled, served with a warm mango salsa.
  • Stuffed Pork Loin – Pork Loin butterflied and stuffed with spinach, feta, sun-dried tomato, and honey-glazed ham, rolled and slow roasted. Sliced thin and served with a tuscan red sauce.
  • Apple-Maple Glazed Pork Tenderloin – Roasted pork tenderloin sliced into medallions and served with an apple maple sauce.
  • BBQ Spare Ribs – Dry-rubbed and slow smoked ribs. Served with a bourbon BBQ sauce.

 

Beef:

  • Blackened Flank Steak – Blacked seasoned flank steak grilled and sliced at desired temperature.
  • Grilled Beef Tenderloin Bordelaise – Beef Tenderloin grilled to perfection, sliced, and served with a marsala beef stock reduction and sliced mushrooms.
  • Stuffed Flank Pinwheels – Butterflied and pounded flank steak stuffed with garlic, parmesan, spinach and roasted red pepper, rolled and slow cooked to medium rare.
    • Ribeye with Caramelized Onion, Crumbled Feta, and Balsamic Reduction – Roasted ribeye with chain off, cooked medium, and sliced. Served with a balsamic glaze topped with caramelized onion and crumbled feta.

Fish:

  • Seafood Purse – Chopped crab and shrimp tossed together with celery, onion, and  a sherry cream sauce, then wrapped in filo dough and baked.
  • Shrimp Scampi – Shrimp sautéed with diced tomato, garlic, basil, butter, white wine and parsley. Can be made with olive oil for dairy allergies.
  • Blacked Tilapia – Blackened seasoned tilapia, baked and topped with pineapple salsa.
  • Baked Scrod – Scrod fish topped with a parmesan-parsley panko, and baked with white wine and butter.
  • Herbed Lemon Salmon – Chilean salmon filet topped with fresh basil, oregano, garlic, and lemon zest. Served with a lemon butter sauce.
